Join me in my first of many episodes of FOOD & FEELS! Today, we are making Vegan Breakfast Burritos with Tofu Scramble. I’m really excited to share recipes and discussions on food, food justice, and more. Thanks for joining me as we create things in this little space and welcome to any new vegans just joining me! This recipe is SUPER simple, super affordable, and is suitable for vegans and could be suitable for many other dietary restrictions as well. Hope you enjoy it and let me kNOW IF YOU MAKE IT!
You’re going to need:
Veggies (I used kale, mushrooms, onions, etc)
Vegan Cheese (optional)
Vegetable Broth (optional (ish))
SPICES! (I used basil and two seasonsings mixes)
Plus…salsa, avocado, and fresh tomato!
What to do:
1. Press Tofu
2. Prep Vegetables
3. Stir fry onions and garlic
4. Crumble Tofu
5. Stir fry rest of vegetables
6. Maybe throw in some vegetable broth (or wine if it’s a weekend brunch, am I right?)
7. Bind with vegan cheese (optional)
8. Put in tortilla, top with avocado, fresh tomatoes and/or salsa
9. WRAP AND ENJOY!
