Packed Vegan Lunch Ideas (Recipes + Pictures)

I received a whole bunch of requests for a video like this, so your wish has been granted! I put together a couple recipe videos all thrown into this one video that I love to bring with me on the go, as well as some additional pictures (with the preparation directions in the caption.)

Also, if you have access to a microwave at school/work/wherever you are going, these meals heat up beautifully. They can also be eaten at room temperature and they will probably stay room temperature if you use an air tight tupperware container (or thermos if you make soup.)

Some good sides/snacks on the go: Apples, bananas, grapes, home made baked pita/tortilla chips and salsa or guacamole, vegetables and hummus, low fat vegan popcorn (Boom Chicka Pop’s “Sweet & Salty” is the brand I buy) but most of the time I air-pop it in a brown bag in the microwave and add nutritional yeast or coconut sugar + cinnamon.

***Some MORE vegan lunch ideas***
~Vegan bagel with tofutti “cream cheese”, an apple, and sliced veggies with your choice of dip (hummus, salsa, etc.)
~Burritos!!!! I definitely recommend those. Just take a vegan tortilla and fill it with beans, salsa, lettuce, guacamole if you want it, and roasted/grilled/or steamed vegetables. (Trader Joe’s and Whole Foods have a good selection of vegan tortillas). (I would personally make either 2 big burritos or 3 small/medium ones.)
~Make a home made soup and store in a thermos. (You can make miso soup, tomato based soup, bean and potato soup, noodles in a vegetable broth, chili, etc. (For soup recipes, check out the few that I have on my channel, stay tuned for more upcoming soup recipes (and more!) or explore youtube’s vegan cooking channels!) Or even invent your own soup.
~Make a sandwich. It could be a peanut butter and banana sandwich or a hummus, cucumber, and tomato sandwich on pita bread or regular vegan bread. (Ezekiel bread [the brand] is vegan and really good!) Or you can mash an avocado on a few slices of bread and season it with spices of your choice and have that with fruit on the side.
