Super Easy Vegan Dinner Ideas!

Ingredients:

Cous Cous Wraps: (2-3 Wraps)

1 cup Cous Cous
1/2 cup chickpeas
1/2 cup marinara Sauce (+ 1 Tbsp)
parsley
2-3 Tortilla
Extra toppings: Avocado, fresh spinach, nutritional yeast, sriracha

Creamy Pasta with Spinach & Mushrooms: (approx. 3 portions)

pasta of your choice
1 cup cremini mushrooms
1 small onion
a handful of fresh spinach
1/2 c almond milk
1/2 c soy creamer
parsley and or basil and or thyme
1 Tbsp corn/potato starch
1 Tbsp nutritional yeast
a pinch of lemon zest

15 min Rice Noodle Salad (1-2 portions)

Rice noodles (ca. 150g)
1 bell pepper
1 carrot
1 leek
1/2 avocado
1/4 cup rice vinegar
2 Tbsp agave
a few splashes of soy Sauce
fresh lime juice
(you can easily double the dressing)
