Vegan! Chocolate Cake (Recipe)

Preheat oven to 180 Celsius / 375 Fahrenheit

Cake Batter (double recipe for two-layer cake) :
– 2 cups flour
– 1 cup sugar
– 1/4 cup coco powder
– 3 tsp baking powder
– 1 tsp salt
– 1 tsp espresso powder
– 1 cup almond milk (or soy milk)
– 1/2 cup coconut oil
– 2 tsp vanilla essence/extract
– 1 cup boiling water (add slowly!)

Chocolate Frosting:
– 1 1/2 cups vegan butter (I used Earth Balance)
– 1 cup coco powder
– 5 cups icing sugar (add one cup at a time)
– 4 tbsp almond milk (add one tbsp at a time with the icing sugar)
– 2 tsp vanilla essence/extract
– 1/2 tsp espresso powder

(Wait until the cake is completely cooled before you add frosting)
