VEGAN LUNCH BOX – 3 healthy recipes for school / work / uni

VEGAN LUNCH BOX Bringing a lunchbox to school, work or uni is not just a great way to save some extra cash, but also to make healthy choices without much of an effort. In today’s video I’m sharing three vegan recipes that you can easily prepare at home and enjoy on the go! CHECK BELOW FOR ALL 3 VEGAN RECIPES!

SWEET POTATO SALAD

INGREDIENTS
FOR THE POTATOES

1 large sweet potato
oil
dried rosemary & thyme
salt & pepper

FOR THE SAUCE
1 red bell pepper
2 garlic cloves
2 tsp. vegan mayo
1 tsp. balsamic vinegar (mine has rosemary in it, but this is optional of course)
fresh thyme & rosemary
salt & pepper

Cover the potatoes chunks (with or without the peel) with a small amount of oil, add the seasoning and bake at 200°C / 390°F for 15 to 20 minutes.

Whilst the potato is in the oven, prepare the sauce: Steam one large red bell pepper with two garlic cloves. Blend the pepper and garlic with the remaining ingredients. You can either add the sauce right away, or store it in a separate container to keep the potato crispy.

AVOCADO & HUMMUS SANDWICH

INGREDIENTS
2 slices whole grain sandwich bread
hummus (get the recipe here: http://www.purepowerpanda.com/2015/08/5-minute-microwave-hummus-recipe.html)
1/2 avocado
tomato
garden cress
garlic salt & pepper

Build your sandwich, cut in in two and add a few fresh strawberries and baby carrots to the side.

VEGAN LUNCH BOWL

INGREDIENTS

broccoli
mushrooms
vegan soy sticks
oil
seasoning salt

FOR THE SAUCE

1/2 cup cashews soak in 1/4 cup water (use the water as well)
1 cup fresh cilantro
2 steamed garlic cloves (steaming is optional, but I think it takes away the harsh flavor)
2 tbsp. lemon juice
1 tbsp. nutritional yeast
salt & pepper

Add a bit of oil and seasoning salt to the veggies and bake them in the oven along side the soy sticks for 10 minutes at 180°C / 350°F. Meanwhile, prepare the dip: Add all ingredients to a blender and blend until you reach an even texture.

Serve with rice or quinoa on the side.
