Vegan Meal Ideas for the New Year! {healthy + easy}

INGREDIENTS:

#1 One Pot Lemon + Mushroom Pasta

For the caramelized onions:

2-3 onions, white or yellow
1 Tbsp olive oil
1 Tbsp raw sugar
season to taste with salt, pepper

For the pasta:

a handful of fresh sage (optional, but recommended)
1 Tbsp olive oil
1 cup mushrooms (~100g)
2 1/2 cups veggie stock (625ml), more of needed
220g pasta of your choice (7,7 oz)
a few handfuls of spinach, fresh or frozen
season to taste with salt and pepper
juice and zest of 1 lemon

For the vegan parmesan:

2/3 cup cashews, without salt (100g)
2 1/2 Tbsp nutritional yeast
1/2 tsp salt
1/2 tsp paprika, smoked
1/4 tsp garlic powder

#2 Avocado & Mushroom Quesadilla

For the avo sauce:

1/2 avocado
1/2 small red onion
2 1/2 Tbsp soy yogurt, unsweetened
a handful of fresh basil
the juice of 1/2 lemon
season to taste w salt, pepper

2 tortillas
a handful of mushrooms, sautéed for a few minutes
a handful of greens
a handful of chickpeas
2 Tbsp nutritional yeast

#3 Cozy Lentil Bowl

1 onion
1 clove garlic
1/2 tsp smoked paprika
1 Tbsp tomato purée
1 can tomatoes, diced
2 1/2 cups veggie stock (625ml)
more water if needed
1/2 cup brown lentils (120g)
1/2 cup red lentils (100g)
season to taste w salt, pepper, paprika and cumin

For the bowl:

starch of your choice (I went for a rice & oat mix)
hummus, vegan pesto
fresh greens
whatever else you might like 🙂
